Paitan Soup Base is a chicken-based variant of the widely popular, creamy and rich tonkotsu ramen broth, which is made from pork. This particular recipe for the tori paitan broth was initially created as a way to utilize leftover ingredients from our pressure cooker chintan shoyu ramen broth recipe. However, the broth can also be prepared using fresh ingredients, independent of the aforementioned recipe. In such cases, the preparation process is only slightly altered, leading to a yield that is somewhat greater in volume, while also being richer in flavor and thicker in texture.
