Kanesu Green Tea Soba is a type of thin noodle that is commonly made from either pure buckwheat flour or a blend of buckwheat and wheat flours. The traditional method of making soba noodles involves using mainly buckwheat and water, but wheat flour is often added to improve the noodle’s cohesion during production. This is why the most widely available type of soba noodle in Japan is hachi-wari soba, which is made with a mixture of 80% buckwheat flour and 20% wheat flour. Today, soba noodles can be found in a variety of flavors, including matcha green tea, ume plum, and wild yam, providing a fun twist on the classic noodle.
